Our second age statement Bill Phil is the fourth cask-strength in the series and the first to have a rum cask influence. The rum cask introduces baking spice, molasses and tropical fruit to the existing orchard and citrus fruit flavours that Bill Phil is known for, creating a wonderful Jamaican-influenced smoky single malt. • Initially matured in first-fill ex-Bourbon cask
• Distilled at Great Northern Distillery, June 2018
• Re-racked in February 2022 into an ex-Rum cask

• Nose:  The initial nose brings forth a delightful combination of earthy peat smoke and sweet tropical notes from the Jamaican rum cask. Imagine a medley of ripe tropical fruits, with pineapple and mango leading, complemented by a subtle smokiness reminiscent of a coastal bonfire.
• Palate:  The first sip reveals a harmonious blend of peat and rum sweetness. The smoky character is well-integrated, offering layers of campfire smoke, charred oak, and a touch of sea salt. The Jamaican rum influence adds a luscious sweetness, with flavors of brown sugar, molasses, and a hint of tropical spice. There’s a velvety mouthfeel that coats the palate, balancing the boldness of the peat with the smoothness from the rum cask.
• Finish:  The finish is long and lingering, with the smokiness evolving into a warm, sweet afterglow. The Jamaican rum cask imparts a touch of exotic sweetness that stays on the palate, leaving a satisfying and memorable conclusion.
