Some things are worth doing slowly.
We're not distillers. We never set out to be. What we set out to do - from the very beginning - was find the finest whiskey being made in Ireland, give it the time and the wood it deserves, and bring it to the glass with complete honesty. No additives, no artifice, no agenda beyond the liquid itself.
That sounds simple. In practice, it demands patience, rigour, and a willingness to walk away from a cask that isn't ready - even when the market is calling.
A Place That Means Something
Our home is a famine-era workhouse on the edge of Kilmacthomas, on the Waterford Greenway. It's a place that carries history in its walls - the weight of what happens when communities lose their independence, their agency, their voice. We don't take the word independent lightly here. It's not a marketing term for us. It's a reminder.
As independent bottlers, we answer to no distillery, no parent company, no house style. Our only allegiance is to what's in the cask. That freedom is the foundation of everything we do, and it's what allows us to be genuinely curious, to take risks, to release whiskeys that you will not find anywhere else.
The Art of the Cask
Wood is where much of our craft lives. The relationship between spirit and cask is a slow, quiet conversation, and we've spent years - and a great many casks - learning how to listen to it.
Selecting the right wood isn't guesswork. It's a discipline built on understanding how different cask types interact with different spirits over time: how a first-fill sherry butt behaves against a young grain, how a reused bourbon barrel softens a peated malt, how a finish can either flatter or overwhelm. We approach each cask individually, with care and with science, because every whiskey we release has our name on it.
The result is a range of whiskeys that don't look or taste like anything else on the Irish market, because they're not made like anything else on the Irish market.
What We Put on the Label
Every bottle we release tells you exactly what it is. The distillery. The age. The cask type. The ABV. The batch number. We believe you deserve to know what you're drinking, and we believe that transparency is the only honest way to do business.
Non-chill filtered. Natural colour. Bottled at meaningful strengths. These aren't buzzwords on our labels; they're commitments.
Why It Matters
Independent bottlers were a cornerstone of Irish whiskey's earliest chapters, and somewhere along the way that tradition was almost lost entirely. We're part of a small but growing group working to restore it - not out of nostalgia, but because the model still makes sense. It keeps whiskey honest. It keeps the market diverse. It gives small distilleries a partner and gives drinkers access to expressions they'd never otherwise encounter.
We do this because we love it. Because a great cask of whiskey is one of the more remarkable things the world produces, and it deserves to be treated that way.
